The cellar
Tradition and new technics

It is one of the most modern in the South of France. The new wine making cellar allows special temperature control for each individual wine making and storing tank, in a cellar which is it-self air conditioned. The cellar was dug in the rock to preserve the quality of the grapes and wines produced.

 

In a traditional cellar made of stony walls (wooden framing and a roof in tiles), are stored French oak barrels, made in the region of Gaillac for the most part, from "merrains"(Stave woods) grown in the close forest of Grésigne. Little light, constant temperature, cool air and aromas of the wood give the best environment to the conditions of storage. Wines are aging from 6 to 12 months.

 

Bottling and storage

All wines are bottled at the Château. The entire facility is air conditioned, to guaranty the best condition of storage until shipping.
