The cellar
Vinification

Elaborated traditionally; controlling vine is necessary (excess buds and foliage are removed, grapes are sorted by hand) to express the full richness of this terroir. Wine from different plots is traditionally made in separate temperature-controlled vats for fermentation and maturing. The final blending is done at the end of December for a first one year period in barrels followed by another period in vats. The bottling is done 18 months later on the Estate.
